Indian Spiced Bison Burgers

So when I'm feeling creative in the kitchen I tend to forget exact amounts. What I will say is that I followed the majority of this recipe from my fav cookbook "Practical Paleo". I've told you about this book before and if you haven't gotten it yet-you need to! Go now, run.
Ingredients:

  • 6 large portobello mushrooms
  • 1&1/2-2 lbs. ground bison
  • 1 tbsp Indian spice (from cookbook: 2 tbsp onion powder, 2 tsp garam masala, 2 tsp coriander, 1 tsp sea salt, 1 tsp black pepper, 1/2 tsp cinnamon, 1/2 tsp red pepper flakes-mixed well)


Remove stems from the mushrooms and clean. Heat oven to 350 and bake the mushrooms for about 10 minutes. Meanwhile mix the meat and Indian spice and separate into six small patties (or four large). Grill those babies up! Place on the portobello mushroom "buns" and top with bacon and guacamole. Serve with a side of veggies (I did baby bok choy stir fried in sesame oil with lemon grass, ginger, garlic, sesame seeds and the chopped stems from the portobello mushrooms).

Sesame Ginger Salmon Burgers

Forgot to defrost the chicken breast today and the only thing readily available was canned salmon.  Whipped up these babies in about 15 minutes and they turned out delicious!

  • Three cans boneless, skinless, pink salmon (I use Natural Directions all natural Pink salmon), drained 
  • 1 tablespoon sesame oil 
  • 1 tablespoon minced garlic, (less if you don't love garlic as much as I do!)
  • 1 teaspoon peeled and minced fresh ginger (I mince a couple strips of pickled ginger strips)
  • ¼ cup chopped onions
  • ¼ cup toasted sesame seeds 
  • 2 large eggs
  • 2-3 teaspoons coconut flour (enough to help the burgers stick)
  • coconut oil or sesame oil, for frying
  • cilantro - for garnish
  • green onions - for garnish
  • a bit of balsamic vinegar to drizzle over the top
  • lettuce leaves

Drain the salmon well.  Combine salmon, sesame oil, garlic, ginger, onions, sesame seeds, eggs and coconut flour.  Form the mixture into 2-inch patties.  Heat the coconut oil in a large skillet over medium-high heat. Cook the patties for 4 to 6 minutes per side, until golden brown.  Transfer patties to a paper-towel lined plate then place on top of lettuce leaves.  Top with a piece of ginger, cilantro, green onions and drizzle with a bit of balsamic vinegar.

Grilled Flank Steak with an Onion Garlic Pear Balsamic Reduction

Whipped this up and it turned out sooo good!

Ingredients:
A flank steak
Salt and pepper
Half a yellow onion, chopped
Two garlic cloves, chopped
One pear, chopped
1 tbsp coconut oil
3 tbsp Baslamic vinegar
1 tsp pure maple syrup

Directions:
Heat up your grill. I used the George foreman.
Season both sides of your flank steak with salt and pepper.
Place the flank steak on the grill and while it's cooking melt coconut oil in a large sauce pan. When oil is melted, add onion and garlic, balsamic and syrup. Sauté for about 10 minutes ad then add the pear. Sauté until the liquid is reduced and the onions, garlic and pear are soft and to your liking. When steak is done, slice against the grain and top with the onion mixture. Enjoy!

Banana Vanilla Pound Cake

Made this for breakfast this morning. It was very tasty but very eggy, like a quiche texture, so be prepared for that. Super nice alternative to "bread" though. Got it from my new fav cook book "Practical Paleo".

Ingredients:
6 eggs
Seeds from 1/4 pod of vanilla bean
1 teaspoon vanilla extract
2 tablespoons coconut butter
2 tablespoons full-fat coconut milk
1/4 cup coconut flour
Pinch of nutmeg Pinch of sea salt
1/2 teaspoon baking soda
Dash of cinnamon

Directions:
Preheat oven to 350°F.
Whisk eggs, vanilla bean, vanilla extract, butter, and coconut milk in a large mixing bowl. Sift coconut flour, nutmeg, salt, cinnamon and baking soda into the egg mixture, and continue whisking until combined. Pour the egg mixture into a 9 inch x 9 inch baking dish lined with parchment paper. Bake for approximately 40 minutes or until the edges are brown and a toothpick wipes clean when testing the center.
We topped it with sliced bananas and a bit of 100% pure organic maple syrup.

Meat and "faux"tatoes

I needed some comfort food tonight. I wanted to splurge on pizza, wings and beer....but I didn't. Instead I started by steaming a head of cauliflower. While that was doing its thing, I cut up some carrots, onions, mushrooms and a couple bulbs of garlic and threw them into my French oven (which was pre-heating on the burner with about a tablespoon of coconut oil). I seasoned the veggie mixture with a few shakes of rosemary, sage, onion powder, garlic salt, garam masala and hot curry powder. Then I threw in a splash of balsamic vinegar. I sautéed them for a bit until the onions were starting to turn translucent. Then I added three lamb chops. I browned the chops on each side and poured in a half a can of coconut milk. I covered the French oven and let it all cook about a half hour. Meanwhile, when the cauliflower was fork tender, I threw it into the food processor and whipped it good with the other half of the coconut milk. Added some sea salt and pepper and holy tummy lovin-it was just like mashed potatoes! When the meat was just about done I turned up the heat to thicken the creamy "gravy" and browned the meat a bit more. And then.....wah lah! Meat and faux-tatoes.

Stuffed Peppers and Practical Paleo

I'm in love with "Practical Paleo" by Diane Sanfilippo, more like obsessed really. It's packed full of paleo recipes but I wouldn't call it a cook book. It's more like an informational book on the fundamentals of paleo. It also includes a ton of 30-day meal plans based on certain ailments. Say for instance you have psoriasis, there's a plan for that. Diabetes? Yep. Sore joints, weight loss, tummy ailments, all sorts of plans. So cool. There are also pull out guides you can take with you or hang on your fridge. Anyway, enough about the book (most awesome ever and I highly suggest you go buy one today!) tonight I made her stuffed bell peppers. So good!
Im being lazy, so I am posting a picture of the ingredients and instructions rather than typing them out. Enjoy!

Lamb Chops with Cranberry Balsamic Reduction

Whipped up these tasty little bites for a protein packed breakfast today. I used grass fed lamb chops and made the reduction like this:
Ingredients:
1/2 cup water
1/2 cup balsamic vinegar
Handful (maybe 1/4 cup) Craisins

Bring all together and simmer until the sauce reduces (making it a reduction) and thickens. If it's too tart, let it reduce longer. Too sweet? Add a bit more vinegar. Once you've got it where you want it, pour over the cooked lamb chops (I throw mine on the George Foreman to cook). Enjoy!!

Tomato, Cucumber, Avocado and Cilantro Salad

I love the colors you get to experience with paleo. You don't get that with processed boxed foods.

It was super hot last week and I wanted something cold and crunchy to cool me down. I found this recipe and literally whipped it up in a few minutes using the heirloom tomatoes from my mom-in-laws garden. Super easy, super fast, super good.

Ingredients:
3 or 4 tomatoes sliced to bite size pieces.
2 cucumbers
2 avocados sliced into bite size pieces
1 head of cilantro, chopped
Juice of 1 lime
1 Tablespoon of olive oil.

Prepare the tomatoes, avocado, and cucumber. Toss in large mixing bowl. Throw in cilantro, toss. Squeeze lime juice over salad, drizzle oil and toss again. Salt and pepper if desired. Eat right away while cold and fresh.

Chocolate Cravings! - 5 Minute Chocolate Mug Cake

Sometimes I miss a good chocolate cake. This recipe comes close when I'm craving. Got this from an awesome site, Fastpaleo.com.

Ingredients
2 1/2 tbsp ghee or coconut oil
2 tbsp cocoa powder
1 1/2 tbsp maple syrup, honey or agave
1 tbsp coconut flour (or almond flour)
1 egg
1/2 tsp of vanilla

1. Place ghee in a mug and melt in the microwave on 50% heat for 45 seconds.
2. Add remaining ingredients and mix well with a fork until completely smooth.
3. Microwave on high for 2 1/2 minutes. Serve warm.

What Is Paleo?

Found this super easy - to the point description of Paleo:

As a simple explanation we define Paleo as eating meat, nuts, veggies, seeds, some fruit, little starch, no sugar, no dairy.A Paleo recommended serving consists of 40%carbohydrate, 30% Protein, and 30% Fat.

Encouraged Foods

  • Lean Meats such as Lean beef (trimmed of visible fat), Flank steak, Top Sirloin, Extra-lean hamburger (90/10), Lean pork (trimmed of visible fat), Pork loin, Pork chops, Any other lean cut
  • Lean poultry (white meat, skin removed) such as Chicken breast, Turkey breast, Game hen breasts
  • Eggs from Chicken (go for the enriched omega 3 variety), Duck, or Goose
  • Other meats including organ meats and game meats such as venison, wild boar, or wild turkey
  • Fish
  • Shellfish
  • Fruit
  • Vegetables
  • Nuts- Tree Nuts. Peanuts are not Nuts and are a no-no

BLT Snackin'

Took advantage of the supremely delicious heirloom tomatoes my ma-in-law gave me and made a super quick and easy BLT. I seriously did not miss the bread at all. The flavor is in the maters and bacon. Yum!

Asian Cabbage Mango Slaw

Had this amazing salad at my friend Layle's BBQ. So good! The original recipe comes from Skinny Taste, an awesome blog for healthy recipes (thank you!), but to make it Whole 30 paleo compliant, follow the directions below:

Asian Cabbage Mango Slaw

Servings: 6 • Serving Size: 1/2 cup •
Ingredients:

2 cups shredded cabbage
1/2 cup shredded carrots
1 mango, not fully ripe
3 medium scallions, chopped
3 tbsp rice vinegar (make sure it's pure with no added sugar)
1/2 lime, juiced
1 tbsp coconut aminos
1 tbsp sesame oil
1 tsp black and white sesame seeds

Directions:

Julienne the mango (cut into strips). Combine with the cabbage, carrots, scallions and toss together in a large bowl.

Prepare the dressing by whisking together the rice vinegar, coconut aminos, and lime juice; slowly whisk in the oil.

Pour the dressing over the cabbage mixture and toss to coat. Let it sit at least 15-20 minutes to let the dressing soak in.

Serve sprinkled with sesame seeds.
Sooooo Good!

Baked Apples

I was craving dessert at work today. All I had was apples, almond butter, coconut sugar and a toaster oven. Well, turns out that's all I needed.

Ingredients:
Apple - sliced in half and the center spooned out a bit
Almond butter - placed in the center of the spooned out apples
Coconut sugar - sprinkled on top of the apple

Bake at 350 degrees for 30-40 minutes (or longer depending on what texture you want) Delicious!.

After

SO much has changed. I am so incredibly more fit. I feel amazing. I have more energy, I sleep better, I am HAPPY! I have lost about 40 pounds to date and I seem to have reached a good weight for me where my fat and muscle are balancing out. I am still trying to lose another 10 pounds, but with all the muscle I have been building, I don't know if that is feasible. Besides, the one huge thing this journey has taught me is that the "number" you weigh is just a number. Your goal should not be a number on the scale. Go by how your clothes fit. Nothing motivated me more than seeing my clothes get "big" and dropping from a size 14 to a size 6, XL's to Mediums (and even some smalls!), you get the picture. Sooo, here I am now. This is what ALOT of hard work, diligence, and life changing decisions can do.

Crock Pot Coconut Curry Pork


Crock Pot Coconut Curry Pork
With this recipe I have put two of my favorite things together.  Indian food and the crock pot!  Enjoy!
Ingredients:
  • 2.5-3lb pork shoulder roast
  • 1-13.66 oz can of coconut milk (I like the Thai Kitchen brand)
  • 1-6 oz. can tomato paste (just check ingredients and make sure it’s 100% tomato, no sugar)
  • 3-5 garlic gloves, minced
  • 1 tablespoon ground ginger (I used about 1 tablespoon fresh from the squeezable tube-LOVE that stuff!)
  • 4-6 tablespoons curry powder
  • 1&1/2 teaspoons Garam Masala
  • 1 teaspoon ground cardamom
  • 1 shallot, minced
  • Two bell peppers chopped (I used one yellow, one red)
  • .5 oz (1/2 a package) of dried Shitake mushrooms (optional)
  • 1/2 cup broth or water (I used water)
Directions:
1.       Mix coconut milk, tomato paste, garlic, spices, shallot, peppers, mushrooms (optional) and water/broth in a bowl until creamy.
2.      Remove fat from pork and place pork roast in crock pot.  Pour coconut milk mixture over roast and make sure it’s all coated.
3.       Cook in crock pot on low for 6-8 hours.  Shred and eat! 

***If you’re not worried about paleo, this would be amazing served with garlic naan!

Something AMAZING happened today.

Hey Kelly, Where Do I Begin?

Several people have asked me: "Where do I begin?" when wanting to start a 30-day paleo challenge. I will give you the exact starting point for me and if it worked for me, it will work for you!

1. Get yourself a journal, or in my case, a blog. You WILL need to write down every tiny thing you put into your mouth during the 30 days. You NEED to keep accountability and this is the only way to do it.

2. Go to this site. http://whole9life.com/2010/05/whole-30-v2/. READ IT! Not just the page I am sending a link to, read the whole blog. It's a great place to start and worth every minute of reading to understand the point behind Paleo and not just the foods you will eat and not eat.

3. Enlist in the support of friends. Post things on Facebook, call people, do what you can to get the motivation you need.

Eight is SO Great!

This is so totally blog worthy to me!! I needed some new jeans (wore a whole in the old ones) and guess what? The 10's were TOO BIG! I held my breath as I tried on the size 8's, and when I button them up I let go of my breath and THEY FIT! Comfortably might I add, not tight at all! I made it into a size 8 pants!!!! I haven't been in single digit pants since I was 17 years old. I am on cloud nine. Obviously the CrossFit and Paleo are paying off - remind me of this when I start to veer off track. ;)

That's All Folks?!? Nahhhh, It's Just The Beginning!

Well. I did it. I had a couple tinsy cheats but I made it 99.8% strict Paleo for 30 days. What did I miss? Alcohol, sweets and cheese. I thought I'd miss bread but was surprised that I didn't! The weight loss was not expected, at least I didn't go into this expecting to lose weight, but going from 186.2 to 169.4 was a HUGE deal! I hadn't seen my scale move while doing CrossFit because of all the muscle I was making. I wasn't discouraged mind you because I could feel my body changing and my clothes were fitting differently, but to see the weight come off as well allowed me extra motivation to get me through the 30 days.

So what did this teach me? HOW TO LOVE MEAT! Haha, bacon and coconut milk are my new best friends. I haven't opened the pantry in a month. I don't even feel tempted by processed "junk" as my entire family now calls it. We don't need chips and Cheese Puffs, crackers, candy, sugary crap. It's all CRAP! That's what my kids think too - another added benefit. They are learning all about eating fresh, natural, raw and healthy. I can't tell you how wonderful it is that they don't beg for all that "junk" anymore. They both have amazingly open minds to foods which is refreshing because with the limited things my daughter can eat, I love to see her trying new, healthy things.

Justin and I have both decided to change our lives to the Paleo way. We will continue to eat Paleo for five days out of the week and allow ourselves two days of not-so-Paleo. Weekends mostly. But this has worked for us. REALLY worked for us. Justin is down 20 pounds!

People ask me "How'd you do it?" and I tell them and they respond with "NO WAY could I do that". Of COURSE you CAN do it. You clearly aren't ready to make the necessary changes to do it if you think otherwise. If I can, you can. If you make excuses before you even start, you aren't ready to give it the commitment it takes to make changes that will change your life. Excuses=staying right where you are. You make the call! All it takes is the will, the commitment, and the plain ol' being fed up of being where you were.

This won't be a "fad". This is our new way of life and I couldn't be more happier. My skin is clear (haven't had a pimple in 30 days folks!), I'm sleeping better, I feel cleaner. I look better.

There are so many people to thank that were involved in the lifestyle change Justin and I have over gone in the last six months. It started with Josh Wright and his amazing friends at CrossFit Ft. Myers. We ran a RAGNAR race with them in January and he introduced us to CrossFit and (we didn't know it at the time but now that I look back, no one had bread on their hamburgers...hmmmmm) Paleo. Then came CrossFit Sandy and my amazing trainers, Andrew Landau and Chelsea Rupp. They are not only awesome trainers, but they push us to do our best and taught us there are no excuses. If you want it, you'll make it happen. They were right. In addition to all my great friends and family who supported me through these last six months, there is Justin. I am not going to say I couldn't have done it without him, because I would have, but man has it been nice having my best friend by my side sharing all these experiences with me. I love him so much and am so thankful he jumped on the wagon with me. Lastly...there is ME. I need to thank myself for loving myself enough to make the changes. Commitment is the huge one here. So many times I wanted to just say "screw it" and cheat or not do a workout. Pushing myself thorough with Andrew's voice in me head "One bite of a cheat food and you'll do 15 pull ups" got me through. My life has changed for the better and I LOVE IT!

I am so excited to continue on and see what other changes occur. I am the happiest, healthiest, fittest I've ever been and THIS is where I want to be. Oh and by the way, on June 28, 2011 I WORE A BIKINI! That hasn't happened since somewhere in the 1990 era. LOL!

Camping!

Ribs, bacon wrapped steaks, bacon and sausage with eggs in the morning. Lots of fruit and veggies. Lunches of deli meats and veggies. I did cheat. Yes, you heard me right. I had a small bit of baked beans. HEY - they were award winning and it would have been an insult to the chef! They were amazing btw. Here are a couple meals including carnitas! Love camping!!

Heaven!


Could someone tell me why it took me 24 DAYS to figure out about THIS? Seriously, after 24 days without dairy, this is like....heaven. It is soooo good and creamy. I had to read the ingredients list three times just to make sure it was strict paleo! Crazy good.

Coconut Butter

I made homemade coconut butter. Yep. I am that cool.

Coconut butter:
unsweetened shredded coconut

-oh wait-that's all there is to it!

Poor the coconut in a food processor and blend until it turns to liquid. Poor into a jar and let harden. Yep, that's it.

Coconut milk smoothie. I know, I have these practically every morning, but I am a drinkable breakfast kinda person.

Cafe Rio salad - paleo-ified!
Chicken salad minus beans, rice, cheese, tortilla and tortilla strips. Extra cilantro lime vinaigrette, jalapenos, pico de gallo and guacamole! Yum-o!

Day 21

Breakfast:
coconut smoothie (a really good one this time! Banana, two eggs, coconut milk, splash of pure vanilla extract - tasted like a vanilla shake!)

Lunch:
So did you know you can get any sandwich at Wendy's in a lettuce wrap? It's not on the menu, but just ask for it and you can! Plus they put it in this nifty little container so it's all pretty.

Ragnar Weekend!

This weekend was a smorgasbord of mixed foods. For race weekend we ate berries, pineapple, hard boiled eggs, bacon, turkey, chicken, Larabars, LOTS and LOTS of Vita-Coco coconut water, and veggies. Sorry I'm not going to break it down, but we ate lots to keep our energy up!

Day 14

Two weeks in! I have lost a total of 14 pounds (depending on the day). Justin is down 1o pounds as well!

Breakfast:
two eggs
chicken chipotle spinach roasted red pepper sausage
coconut milk
banana
coffee

Lunch:
turkey breast slices
strawberries
coconut covered dates

Bacon and spinach wrapped scallops and shrimp

Day 12

Breakfast: Justin put his chef hat on. Go iron chef hubby!
Sweet Potato Poblano Frittata
• 8 eggs
• ¾ large poblano diced
• ¼ cup diced onions
• 1 sweet potato, shredded
• 12 oz. bacon, diced
• ¼ tsp. sage
• Pinch of Williams-Sonoma crushed chipotle chilies
• 5 baby portabella mushrooms, sliced.
• ¼ cup coconut milk
• 1 small clove garlic, minced
• Pinch of salt

In a large skillet, cook bacon to desired doneness. Remove bacon and place on plate with paper towel to drain fat. Leave bacon drippings in pan. Add onions, garlic and diced poblanos. Cook until onions are translucent, about 3-4 minutes. Add shredded sweet potatoes and cover. Cook about 5 minutes turning occasionally. In a separate bowl, whisk together eggs and coconut milk. Add a pinch of salt and ½ of the sage to egg mixture. Add mushrooms to skillet mixture and rest of sage. Once sweet potatoes have a golden brown on bottom, add egg mixture and cover. Cook 3 minutes then place skillet in oven at 350 degrees for about 2& ½ minutes. Set oven to broil, uncover frittata and broil for another 2 & ½ minutes.
Be careful when removing skillet from oven. Cut with spatula into pie shapes, garnish with avocado or Wholly guacamole or salsa. Serve immediately

*If not strict paleo, add shredded fontina or parmesan cheese just before broil.
*For added meat, add cooked sage sausage into the egg mixture.

Breakfast:
two slices turkey breast wrapped around two eggs and avocado

Lunch:
Well-look at that. I forgot lunch today.

Dinner:
Grilled lemon dill salmon (first time ever we didn't use butter and it was WAY better!)
salad greens with honey vinaigrette and sliced pears
rosemary garlic "faux-tatoes" (steam a head of cauliflower put it into food processor and puree until mashed "tatoe" consistency add a clove of garlic, rosemary and some onions (I sauteed them first).
